Amador Foothill Still High on Sangiovese
Special tanks were ordered to better control fermentation, and top-quality French oak barrels from the Gamba Cooperage, used in the finest cellars of Italy, were obtained. Most important, Antonini showed Quinn how to use new oak with Sangiovese without overpowering the wine’s delicate aromas and flavors. The judicious use of the Gamba barrels resulted in wines with great color stability, complex tannin structure and lush Sangiovese fruit flavors.
